A Perfect Summer Meal


Last night I made a delicious meal of pasta with roasted vegetables. I took some summer squash, cherry tomatoes, red onions and garlic, seasoned with salt and pepper and drizzled with olive oil and roasted at 450 for 40 minutes. Then tossed the vegetables with pasta, some homemade pesto and a bit of parmesan cheese. It was great. I can't wait for the leftovers tonight!!!!!
